Pita Bread with Roasted Potatoes & Greek Yogurt

Sometimes, you just need a break from eating the same thing every day. I was getting tired of using taco bread and inventing different fillings around it, so I decided to try something fresh. Pita bread and Mediterranean-inspired flavors turned out to be exactly the change I needed.
Ingredients
- 1 pita bread (Costco pita, approximately 8 g protein)
- 1 medium potato, peeled or unpeeled
- 1/3 cucumber
- 1 Roma tomato
- 3 tbsp Greek yogurt
- A few drops of lime juice
- Italian seasoning, to taste
- Red chili powder, to taste
- Turmeric powder, to taste
- Coriander powder, to taste
- Salt, to taste
- A little cooking oil
- Taco sauce, to taste (optional)
- Tahini sauce (optional, for a future variation)
- Optional protein: cooked eggs, tofu, or chicken
My version
I went with crispy air-fried potatoes instead of a traditional meat filling. Greek yogurt mixed with lime and Italian seasoning makes a simple, creamy sauce, while taco sauce adds a little heat. Tahini would also be a great addition for a more Mediterranean-inspired flavor.
I used Costco pita bread, which provides approximately 8 g of protein per piece. For extra protein, eggs or tofu would work well. Chicken is an option for those who eat it, but not for me!
Method
- Prepare the potatoes: Wash the potato and peel it if preferred. Cut it into small, evenly sized cubes.
- Season: Toss the potato cubes with salt, red chili powder, turmeric, coriander powder, and a little oil.
- Air-fry: Cook at approximately 400°F for 10–12 minutes, shaking the basket halfway through. Continue cooking if needed until the potatoes are golden and crispy.
- Prepare the vegetables: Slice the cucumber thinly and dice the Roma tomato.
- Make the sauce: Mix the Greek yogurt with a few drops of lime juice, Italian seasoning, and a pinch of salt.
- Warm the pita: Heat the pita bread slightly in a pan or microwave. Add a pinch of herbs if desired.
- Assemble: Cut the pita open to form a pocket. Fill it with the crispy potatoes, cucumber, tomato, and your preferred protein.
- Finish and serve: Add the Greek yogurt sauce and a little taco sauce for extra spice. Serve warm
What I remember
I was fed up with eating just taco bread and constantly trying to reinvent it. This was a refreshing change: something crispy, fresh, creamy, and easy to put together. It reminded me that sometimes a new combination of familiar ingredients is all you need to make everyday meals exciting again.
